Food Friday: Chicken Tortilla Soup
My mom made tortilla soup while I was in Phoenix. She had gotten the base from a craft fair. And I thought, I can make that at home. So I went in search of a recipe. My sister told about one she used in the crock pot, that it stated to not be afraid of all the ingredients and it used enchilada sauce. I found it here.
And everyone was right. The ingredient list is long but not horrible (my turkey chili recipe has a longer list) and it all just gets mixed together in the crockpot. Set it on low for 8 hours and we were done!
I did crush up tortilla chips and added them in during the last hour to thicken up the soup a bit. But it would have been fine without it as well.
