Food Friday: Peanut Butter Pretzel Truffles

Sorry this is so late but I didn’t get these done until dinner time.  The recipe is from Brown Eyed Baker and you can find it here.

It was super simple and I actually had everything I needed in the house.  Peanut Butter Pretzel Truffles.  She calls them Chubby Hubby Truffles.

You mix smooth PB with butter and brown sugar, add some crushed pretzels and then some powdered sugar.  Shape them into balls and let them chill in the fridge.  Then you dip them in chocolate.  Semi-sweet or milk chocolate chips melted with shortening.  Or I used the Ghiradelli dipping chocolate that I found at Sam’s recently.

My only revision would be to use a few less pretzels next time.  But who can argue the awesomeness of salty and sweet, mixed together in little bite-sized piece of heaven?

I will definitely keep this recipe handy.  It is a great alternative to the classic holiday buckeye or peanut butter ball.
