Food Friday: Pumpkin Bread
Food Friday is coming to you a little later this morning. But FRESH! I was out to dinner with friends last night and didn’t get to the recipe until this morning. I just wish it had been ready in time for my coffee!
Today’s recipe is Pumpkin Bread. Pumpkin recipes are everywhere right now and this quick bread recipe seemed popular, easy and wonderfully simple. The recipe is from the Brown Eyed Bakers list of of best pumpkin recipes, and can be found here. And because I forgive her for not winning her Soda Maker giveaway, I will try her Pumpkin Bread recipe!
Turns out I didn’t have two loaf pans (soon to be rectified), I used one loaf pan and one mini-loaf pan. I will have to watch the cook time on the mini-loaves, but it should all turn out fine. And I just love mini-anything. The mini’s took about 40 minutes and the loaf took about 65 minutes.
I don’t usually jump into what I bake, but DAMN these are good! The missing one is the one I ate. Enjoy.
